Pink Peppermint Frosting - cooking recipe
Ingredients

1 1/2 c. sugar
2 egg whites
1/8 tsp. salt
1/4 tsp. peppermint extract
1/2 c. water
1 Tbsp. light corn syrup
2 or 3 drops red food coloring
Preparation

Combine sugar, water, egg whites, syrup and salt in top of double boiler.
Before placing over boiling water, beat mixture at low speed for 1 minute or just until blended.
Place over boiling water.
Beat at high speed for 7 minutes or until stiff peaks form.
Remove from heat.
Add extract and coloring.
Beat at high speed for 2 minutes or until thick enough to spread. Yields 7 cups.
