Zucchini Bread - cooking recipe

Ingredients
    2 c. raw grated zucchini (unpeeled)
    2 1/2 c. flour
    1/2 tsp. baking powder
    3 tsp. cinnamon
    2 c. sugar
    1 c. nuts, chopped
    1 tsp. soda
    1 tsp. salt
    2 tsp. nutmeg
    3 eggs
    1 c. oil
    2 tsp. vanilla
Preparation
    Grate zucchini and set aside to drain.
    Sift dry ingredients together and set aside.
    Beat eggs until light and fluffy; add sugar, oil and vanilla to eggs.
    Mix well.
    Blend in sifted ingredients; add nuts.
    Bake at 350\u00b0 for one hour.
    Use 2 greased 9 x 5-inch loaf pans or one long loaf pan.
