Cornish Hens In Rice Stuffing - cooking recipe

Ingredients
    2 game hens
    salt and pepper
    2 Tbsp. slivered almonds
    2 Tbsp. finely chopped onion
    1/3 c. uncooked rice
    3 Tbsp. butter
    1 c. water
    1 chicken bouillon cube
    1 tsp. lemon juice
    1/2 tsp. salt
    1 (3 oz.) can chopped mushrooms, drained
Preparation
    Season hens with salt and pepper.
    In saucepan, cook almonds, onion and rice in butter for 5 or 10 minutes.
    Add water, bouillon cube, lemon juice and salt.
    Boil slowly 20 to 25 minutes or until rice is fluffy.
    Stir in mushrooms.
    Brush hens with butter after stuffing with rice.
    Roast in shallow covered pan at 400\u00b0 for 30 minutes.
    Uncover and roast 1 hour longer.
    Brush birds with melted butter the last 15 minutes.
