Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1 egg
    1 medium onion
    1 can mushroom soup
    1/2 c. cracker crumbs
    1 c. grated Cheddar cheese
Preparation
    Peel; cut into 1/2-inch cubes and boil
    eggplant
    until done. Drain and stir in egg, onion and crackers
    to
    thicken. Pour layers of eggplant and mushroom soup into
    casserole
    and top with
    grated
    cheese.
    Cook
    in 350\u00b0 oven for 15
    to
    20 minutes.
