Chili Rellenos - cooking recipe

Ingredients
    2 cans whole green chili peppers or 8 fresh mild whole chilies, roasted and peeled
    3 eggs, separate white and yolks
    1 to 2 Tbsp. flour
    1/2 tsp. salt
    Monterey Jack cheese
Preparation
    Cut cheese into strips and stuff into peppers.
    Beat egg whites and salt until very stiff.
    Combine egg yolks and flour until mixed.
    Fold in egg whites.
    Dip chilies into batter and fry in oil, turning once, until brown and eggs are set.
