Breaded Tomato Slices - cooking recipe

Ingredients
    2 beaten eggs
    1 Tbsp. milk
    1/4 tsp. salt
    dash of pepper
    4 medium tomatoes (firm)
    1 c. crushed saltine crackers
    2 to 3 Tbsp. cooking oil
    1/2 c. shredded sharp American cheese
Preparation
    Combine eggs, milk, salt and pepper.
    Cut tomatoes in 3/4-inch thick slices.
    Dip in cracker crumbs, then in egg mixture and again in crumbs.
    Fry in hot oil until browned.
    Sprinkle with cheese.
    Cover and cook over very low heat until cheese is melted. Makes 4 servings.
