Mingey Potatoes - cooking recipe
Ingredients

6 medium Idaho potatoes
2 c. shredded Cheddar cheese
1/4 c. butter
2 c. sour cream (room temperature)
1/3 c. chopped green onions
1 tsp. salt
1/4 tsp. white pepper
Preparation

Cook potatoes in skins.
Cool, peel and coarsely shred.
In saucepan, cook butter and cheese.
Stir until almost melted. Remove from heat.
Blend seasonings, sour cream and onions.
Add potatoes and stir.
Turn in butter.
Put in 2-quart casserole.
Dot with butter.
Bake in oven at 350\u00b0 for 25 minutes or until heated. Cover casserole when baking.
Serves 8.
