Old-Fashioned Vermont Beans - cooking recipe

Ingredients
    1 qt. yellow-eye beans (or any dried bean)
    1 smoked ham hock
    1/2 tsp. baking soda
    2 tsp. salt
    1/2 tsp. dry mustard
    1 medium onion
    1 to 1 1/2 c. maple syrup
Preparation
    Wash beans, cover with cold water.
    Add soda and soak overnight.
