Ingredients

2 Tbsp. sugar
1 Tbsp. cornstarch
2/3 c. water
1/3 c. vinegar
1/2 tsp. salt
3 c. sliced, cooked beets
1 small onion, sliced thin
1 Tbsp. butter
Preparation

Mix sugar and cornstarch in saucepan.
Add water, vinegar and salt and bring to boil, stirring.
Add beets and onion; cover and simmer for 5 minutes.
Stir in butter until melted.
Makes 6 servings.
