Potato Candy - cooking recipe

Ingredients
    1 medium potato
    1 box powdered sugar
    1/2 tsp. vanilla
    peanut butter
Preparation
    Peel
    potato
    and
    boil until soft.
    Drain; run through ricer. Cool
    slightly.
    Add vanilla and enough powdered sugar to make pie
    dough
    consistency.
    Roll out between wax paper. Spread with peanut butter.
    Roll up like jelly roll;
    slice.
