Zucchini Relish - cooking recipe

Ingredients
    12 c zucchini
    6 tsp. canning salt
    2 green peppers, chopped
    1 onion, chopped
    2 large cucumbers, chopped
    1 large jar pimento
    2 1/2 c white vinegar (5% acid)
    1 tsp. celery seed
    1 tsp. turmeric
    4 c. sugar
Preparation
    Peel and shred zucchini/
    Mix with canning salt and let sit overnight.
    Next morning, put in colander and let drain.
    Add zucchini with all other ingredients and bring to full boil.
    Fill jars and process for 15 minutes.
    Makes 7 pints.
