Shrimp Sea Island - cooking recipe
Ingredients

5 lb. cooked shrimp
10 mild, white onions, sliced in thin rings
1 pt. pure olive oil
3/4 pt. cider vinegar
1 large bottle capers (with juice too)
Preparation

Clean shrimp, wash and drain.
In a deep, flat dish, place a layer of shrimp and then a layer of sliced onions, alternating until all ingredients are used.
Mix oil, vinegar and caper dressing thoroughly and pour over shrimp and onions.
Cover and refrigerate at least 12 hours before serving, stirring at intervals.
Serve on a large platter decorated with crisp lettuce leaves and parsley.
A fine buffet dish - or a great shrimp salad!
