Lemon Squares(Prepared The Day Before) - cooking recipe
Ingredients

2/3 c. butter or margarine
1 1/2 c. all-purpose flour
4 eggs
2 c. firmly packed brown sugar
1 1/2 c. shredded coconut
1/4 tsp. baking powder
1 tsp. vanilla extract
1 1/3 c. powdered sugar
2 Tbsp. grated lemon rind
3 Tbsp. freshly squeezed lemon juice
Preparation

Cut butter into flour until mixture holds together.
Pat evenly into an ungreased 12 x 8 x 2-inch pan.
Bake at 350\u00b0 for 20 minutes.
Meanwhile, beat eggs; add brown sugar, coconut, baking powder and vanilla extract.
Spread over baked base.
Return to oven and bake for 25 to 30 minutes.
(Actually, about 28 minutes is right.)
Blend together powdered sugar, lemon rinds and lemon juice.
Frost cookies while they are very hot, immediately on removing from the oven.
Cut into 2-inch squares.
Leave uncovered, at least overnight, before storing in airtight container.
Yields about 24.
