Pork Roast With Minted Couscous - cooking recipe

Ingredients
    4 to 6 lb. pork roast (loin only)
    salt and pepper
    fresh or dried rosemary
    fresh mint
    couscous
Preparation
    Ask butcher to \"crack\" the pork loin roast as that the roast is cut through at the bone.
    Coat with salt and pepper.
    Put fresh or dried rosemary between each \"crack.\" Coat outside with rosemary.
    Bake at 350\u00b0 after first broiling for a few minutes to brown the roast.
    Cook about 1 1/2 hours until done.
    Serve with cooked couscous which has been flavored with 1/4 cup olive oil and chopped, fresh mint.
