Sauteed Potato Cubes - cooking recipe

Ingredients
    6 medium potatoes (1 1/2 lb.), peeled and cut into 1/2-inch cubes (about 3 c.)
    salt to taste
    water
    1/3 c. oil
    fresh ground pepper to taste
    2 Tbsp. butter or margarine
Preparation
    In saucepan, bring to boil the potatoes and enough salted water to cover.
    Reduce heat; simmer for about 2 minutes.
    Drain. In skillet, heat oil.
    Add potatoes.
    Season with salt and pepper. Cook, shaking skillet occasionally and stirring gently, about 10 minutes or until potatoes are nicely browned.
    Drain in colander. Return to skillet; add butter.
    Over high heat, toss potatoes about 5 minutes.
    Makes 4 servings.
