Mrs. Coffey'S Potato Scallion Soup - cooking recipe

Ingredients
    potatoes (5 lb.)
    2 Spanish onions
    2 stalks scallions
    1/2 lb. butter
    3 to 4 c. milk
    salt and pepper
    3 c. chicken stock
Preparation
    Slice onions and dice scallions.
    Peel potatoes but leave 20% of skin on.
    Boil potatoes with onions.
    Cook to desired softness; strain potatoes.
    Mash potatoes with all ingredients.
    Add more chicken stock if soup is too thick for your taste.
