Zucchini Soup - cooking recipe
Ingredients

5 medium zucchini, sliced thin
1/4 c. butter
1 medium onion, chopped
2 cans chicken broth
1/2 to 1 can water
1/2 c. light cream (half and half)
1/4 tsp. nutmeg
Preparation

Saute onion and zucchini in butter; simmer for 15 minutes. Pour into blender, small amount at a time; blend until smooth. Add chicken broth, cream, nutmeg and salt and pepper to taste. Store in refrigerator until ready to serve.
Can be served hot or cold.
