Roast Chicken Rignato A La Contessa - cooking recipe

Ingredients
    1 broiler chicken (about 3 to 4 lb.), cut into serving pieces
    1 lemon, cut in half
    salt and pepper to taste
    1/4 c. olive oil
    1/4 c. unsalted butter, melted
    1/4 tsp. dried oregano
    3 to 4 medium potatoes, quartered and peeled (if desired)
Preparation
    Squeeze lemon juice on chicken.
    Sprinkle with salt and pepper.
    Set aside at room temperature for 30 minutes.
    Place chicken in a small roasting pan with olive oil and butter. Sprinkle with oregano.
    Roast in a preheated 325\u00b0 oven, basting frequently for about 1 hour.
    Add potatoes and bake 1 hour longer. (Chicken should be well cooked.) Turn occasionally to brown on all sides.
    Makes 4 servings.
