Potato Fondant - cooking recipe
Ingredients

4 oz. mashed potatoes
12 oz. powdered sugar
4 oz. coconut
1 tsp. vanilla
melted chocolate
Preparation

Mix first 4 ingredients.
Chill for several hours.
Knead with hands until smooth and creamy.
Shape into bonbons; dip in melted chocolate.
May be tinted with food coloring if desired.
May use rum, lemon, maple or any other extract instead of vanilla.
Mashed potatoes must be free of lumps to give candy smooth satiny texture.
