Chopped Eggplant - cooking recipe

Ingredients
    eggplant
    1 onion
    1 large segment garlic
    1 Tbsp. olive oil
    lemon juice and salt to taste
Preparation
    Microwave eggplant, one at a time, for 15 minutes.
    If not completely soft, add a few minutes.
    Poke them first to let steam escape.
    When cool, scrape flesh from skin and chop well.
    (This can be done in a 350\u00b0 oven, but microwave retains lovely celadon green color!)
