Rotel Potatoes - cooking recipe
Ingredients

7 to 8 potatoes, boiled in jackets
1 large green pepper, chopped
1 large onion, chopped
1 small can mushrooms, sliced and drained
1/2 stick margarine
1 can Ro-Tel tomatoes, diced
1 lb. Velveeta cheese
Preparation

Quarter potatoes and place in large baking dish.
Saute onion, pepper and mushrooms in margarine.
Mix tomatoes and melted cheese with onion mixture.
Pour over potatoes.
Heat at 350\u00b0 until cheese bubbles.
