Bahamian Conch Chowder - cooking recipe
Ingredients

1 c. diced conch
2 c. diced potatoes
1/2 c. celery, diced
1/2 c. carrots, diced
1/2 c. green pepper, diced
1 (No. 2) can whole tomatoes, chopped (or fresh)
2 oz. bacon, diced
1/2 c. ham, diced (optional)
1/2 c. onion, diced
1/4 tsp. thyme
salt and pepper to taste
Preparation

Wash, drain and dice conch.
Cook bacon.
Saute onion in bacon fat.
Pour all ingredients in Dutch oven to cook with 2 quarts of water for 3 1/2 hours or until done.
Season with hot sauce or Worcestershire sauce.
