Applesauce Muffins - cooking recipe
Ingredients

1 3/4 c. whole wheat pastry flour
2 tsp. baking powder
3/4 tsp. cinnamon
1/4 tsp. ginger
1 egg, beaten
3/4 c. applesauce
1/2 c. honey
1/3 c. oil or butter, melted
1/4 c. apple juice
1/2 c. pecans (optional)
1/2 c. raisins (optional)
Preparation

Stir together flour, baking powder, cinnamon and ginger. Combine egg, applesauce, honey, oil and apple juice.
Add to flour mixture.
Stir just until flour is moistened.
The batter should be lumpy.
Fold in pecans and raisins.
Fill 12 greased muffin tins 2/3 full.
Bake at 400\u00b0 for 20 to 25 minutes until lightly browned.
Serve warm.
