Peach Pork Picante - cooking recipe

Ingredients
    1 lb. pork, cut into 3/4-inch cubes
    1 Tbsp. taco seasoning mix (purchased)
    2 tsp. vegetable oil
    1 (8 oz.) bottle chunky salsa (purchased)
    1/3 c. peach preserves
Preparation
    Coat pork cubes with taco seasoning. Heat oil in large nonstick skillet over medium-high heat.
    Add pork and cook to brown, stirring occasionally.
    Add salsa and preserves to pan. Lower heat.
    Cover and simmer for 15 to 20 minutes. Serve with hot rice and mixed bean salad.
    Serves four.
