Peppe'S Coconut Bread - cooking recipe
Ingredients

1 lb. (4 sticks) butter, softened
4 c. sugar
8 eggs
8 tsp. coconut extract
1 lb. (4 c.) shredded coconut
8 c. flour (all-purpose)
4 tsp. baking soda
4 tsp. baking powder
4 c. sour cream
Preparation

Cream together butter and sugar.
Beat in eggs and extract, then sour cream.
Add coconut.
Sift together flour, soda and baking powder.
Fold into batter.
Divide into four greased loaf pans and bake at 350\u00b0 for about 45 minutes or until inserted toothpick comes out clean.
You may easily measure to make 1, 2, 3 or 4 loaves.
Freezes well.
