Tortierre(Canadian Pork Pie) - cooking recipe

Ingredients
    3 lb. ground pork or 1 1/2 lb. ground pork and 1 1/2 lb. hamburger
    2 1/2 tsp. salt
    1/2 tsp. pepper
    2 1/2 tsp. allspice
    1 tsp. cloves
    1 tsp. cinnamon
    2 Tbsp. sage
    1 large onion, chopped
    3 to 4 medium potatoes, mashed
    recipe for 2 (2-crust) pie shells
Preparation
    In a large, heavy pot, combine all ingredients, except crusts. Simmer for 2 to 3 hours, draining fat off with spoon as mixture cooks.
    Boil and mash the potatoes.
    Add to pork mixture.
    Stir until thoroughly combined.
