Bologna - cooking recipe

Ingredients
    24 lb. ground beef
    16 lb. ground pork
    1 c. Tender Quick
    3 tsp. ground coriander
    2 tsp. mace
    12 tsp. liquid smoke
    1 Tbsp. black pepper
    3 qt. water
    onions (if desired)
Preparation
    Mix all together thoroughly and let cure for 48 hours.
    Stuff into jars and pressure can for 35 minutes or cold pack for 2 1/2 hours.
