English Muffin Bread - cooking recipe

Ingredients
    3 1/2 c. flour, divided
    2 pkg. active dry yeast
    1/4 c. sugar
    2 tsp. salt
    1 1/4 c. hot water
    1/2 c. salad oil
    2 eggs
    cornmeal
Preparation
    Combine 1 1/2 cups flour, yeast, sugar and salt in a large mixing bowl.
    Add hot water and mix until dry ingredients are moistened.
    Beat 2 minutes or until smooth.
    Blend in oil.
    Add eggs, one at a time, and beat well after each addition.
    Add remaining flour (or enough to make a stiff batter) and beat well for 1 minute or until smooth and elastic.
    Cover and let rise in a warm place until light and bubbly, about 1 hour.
    Stir batter down and turn into 2 greased 8 x 4 x 2-inch loaf pans, which have been dusted with cornmeal.
    Cover and let rise until doubled (about 30 minutes).
    Bake in preheated 375\u00b0 oven for 15 to 20 minutes.
    Allow bread to cool completely, then invert and shake gently to remove. To serve, cut 1/2-inch slices and toast.
