Pineapple Upside-Down Cake - cooking recipe

1 (8 1/2 oz.) can sliced pineapple
3 Tbsp. butter
1/2 c. brown sugar
4 maraschino cherries, halved
1/3 c. shortening
1/2 c. sugar (granulated)
1 egg
1 tsp. vanilla
1 c. sifted flour
1 1/4 tsp. baking powder
1/4 tsp. salt
Preparation

Drain pineapple (reserve syrup).
Halve pineapple slices.
Melt butter in an 8 x 8 x 2-inch pan.
Add brown sugar and 1 tablespoon of juice.
Arrange pineapple in bottom of pan.
Place cherry half in center of each pineapple.
Cream together shortening and sugar until light.
Add egg and vanilla.
Beat until fluffy.
Sift together the dry ingredients.
Add water to pineapple juice to make 1/2 cup.
Put all together and beat.
Spread over pineapple.
Bake at 350\u00b0 for 40 to 45 minutes.
