Pumpkin Cake Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
1/2 tsp. nutmeg
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
1 c. chopped pecans
Preparation

Beat the eggs on high speed of mixer for 5 minutes.
Gradually beat in the sugar.
Stir in pumpkin and lemon juice.
Stir in together the remaining ingredients, except pecans.
Spread in a greased and floured 15 x 10 x 1-inch pan.
Top with the chopped pecans.
Bake at 375\u00b0 for 15 minutes.
Turn out on a towel sprinkled with powdered sugar.
Start rolling at narrow end.
Roll towel and cake together.
Cool; unroll.
Spread with filling and reroll cake.
