Chicken Noodle Soup - cooking recipe

Ingredients
    1 stew hen, 3 to 4 lb.
    1 large onion, chopped
    1 c. chopped celery
    2 carrots, chopped
    1 bay leaf
    3 parsley sprigs
    1 Tbsp. salt
    3 c. thin noodles
    pepper
Preparation
    Cut stew hen into serving pieces.
    Place in large kettle with next 5 ingredients.
    Cover with 2 quarts of water and bring to boil.
    After liquid has come to a boil, reduce heat and simmer until hen is tender.
    (Add salt after cooking about an hour.) Remove chicken from broth, cool, and cut into bite size pieces. Strain broth and discard vegetables.
    Skim all fat from chicken broth.
    Bring 1 1/2 quarts broth to a boil, add noodles and simmer for 20 minutes.
    Add chicken.
    Add pepper and more salt, if needed.
