Christmas Salad - cooking recipe

Ingredients
    8 to 10 c. lettuce
    1 avocado, thinly sliced
    1/4 c. red onion, thinly sliced
    1/2 c. dried cranberries
    1 large can mandarin oranges, drained
    4 Tbsp. cranberry juice concentrate
    4 Tbsp. rice wine vinegar
    1 1/2 tsp. Dijon mustard
    1/4 tsp. freshly ground pepper
    1/2 c. canola or vegetable oil
Preparation
    Toss lettuce, avocado, red onion, cranberries and mandarin oranges together. Mix cranberry juice concentrate, rice wine vinegar, mustard, pepper and oil. Pour over salad and toss.
