Applesauce-Raisin Spice Cake(Diabetic) - cooking recipe

Ingredients
    1 c. raisins
    1 c. water
    1 c. unsweetened applesauce
    2 eggs
    1/2 c. sugar substitute (Sugar Twin or other)
    1 tsp. baking soda
    2 c. flour
    1 1/4 tsp. ground cinnamon
    1/2 tsp. ground nutmeg
    1 tsp. vanilla
    1/2 tsp. salt
Preparation
    Cook raisins in water until soft.
    Cool and drain.
    Add to raisins, applesauce, eggs, sugar substitute and oil.
    Mix well. Blend in soda, flour, spices, vanilla and salt.
    Pour in a greased and floured Bundt pan or 24 cupcake pans with liners.
    Bake cake at 350\u00b0 for 50 minutes or bake cupcakes at 350\u00b0 for 25 minutes. Makes 24 servings.\tContains 140 calories.
