Hawaiian Chicken Salad - cooking recipe
Ingredients

2 c. cubed, cooked chicken
3/4 c. chopped celery
2 hard-boiled eggs, diced
3/4 c. mayonnaise
3/4 c. diced sweet pickles
3/4 c. diced cucumber
1 c. lychees, split in half (save one to add as garnish on top of each serving)
Preparation

Combine all ingredients; toss lightly.
Serve on leaf of \"butter lettuce\".
Garnish with sprig of mint and one lychee.
