Pork Chop Suey - cooking recipe

Ingredients
    2 lb. pork, cut into 1/2-inch cubes
    2 Tbsp. oil
    3 c. celery
    1 large onion, sliced
    1 large green pepper, cut into strips
    1/2 tsp. salt
    1 clove garlic
    2 (1 lb. each) cans Chinese mixed vegetables (undrained)
    1/2 lb. mushrooms (use canned ones)
    3 Tbsp. cornstarch
    3 Tbsp. soy sauce
Preparation
    Brown pork in oil in a large skillet over medium heat.
    Add celery, onion, green pepper, salt, garlic and 1 cup liquid drained from vegetables.
    Simmer, covered, over medium heat until tender, about 25 minutes.
    Add vegetables and mushrooms.
    Cook and stir until heated through, about 10 minutes.
    Stir in cornstarch.
    Cook until thickened.
    Season with soy sauce.
