Fluffy Potato Casserole - cooking recipe
Ingredients

2 c. mashed potatoes
1 (8 oz.) pkg. soft cream cheese
1 small onion, finely chopped
2 eggs, well beaten
1 Tbsp. plain flour
1/4 tsp. salt
1/8 tsp. pepper
1 (3 oz.) can French fried onion rings, crushed
Preparation

Combine first 7 ingredients.
Beat for 2 to 3 minutes on medium speed with an electric mixer.
Pour into a greased 1 1/2-quart casserole dish.
Spread crushed onion rings evenly over the top.
Bake, uncovered, for 30 to 35 minutes in 300\u00b0 oven.
