Bacalhau A Gomes-Sa - cooking recipe

Ingredients
    4 medium onions, peeled and sliced 1/4 inch thick
    olive oil (enough to cover heavy skillet bottom about 1 inch)
    1 bay leaf
    1 1/2 to 2 lb. dry codfish, soaked in cold water overnight and cooked
    1 clove garlic, peeled and sliced
    4 large potatoes, boiled, peeled and sliced 1/2 inch thick
    1/2 tsp. pepper
    1/2 c. sliced ripe olives and a few whole ones for garnish
    1/2 c. snipped parsley
    4 Tbsp. vinegar or more (depending on taste)
Preparation
    Place olive oil in heavy skillet.
    Add onion rings and saute until very lightly browned and transparent.
    Do not overcook.
    Add garlic, pepper, bay leaf and vinegar.
    Set aside.
