Tofu Veg Enchiladas - cooking recipe

Ingredients
    1 bunch chives, chopped
    2 c. fresh corn
    1 red bell pepper, sliced
    1 jalapeno, minced
    1 tsp. cumin seed
    1 lb. tofu, crumbled
    10 (8-inch) corn tortillas
Preparation
    Saute all ingredients (except tortillas) until tender, then wrap in corn tortillas.
    Pour peanut butter sauce over enchiladas and top with cheese if desired.
