Jalapeno Cornbread - cooking recipe
Ingredients

2 1/2 c. yellow cornmeal
1 c. all-purpose flour
1 Tbsp. plus 1 tsp. baking powder
1 Tbsp. salt
2 Tbsp. sugar
1/2 c. nonfat dry milk
3 eggs, lightly beaten
1 1/2 c. water
1/2 c. vegetable oil
1 (17 oz.) can cream-style corn
3 to 4 jalapeno peppers, seeded and chopped
2 c. sharp cheese, shredded
1 c. minced onion
Preparation

Combine
cornbread,
flour,
baking powder, salt, sugar and milk;
make
a
well
in center of mixture.
Combine eggs, water and
oil;
add
to dry ingredients, stirring until moistened. Fold in corn and remaining ingredients.
Spoon mixture into a greased

2-inch
pan.
Bake at 425\u00b0 for 35 minutes or until
a knife inserted in center comes out clean. Yields 15 servings.
