Zucchini Bread - cooking recipe

Ingredients
    3 eggs or 1 pkg. Egg Beaters
    2 1/4 c. sugar
    2 c. zucchini, grated
    3 1/4 c. flour (white or 1/2 white and 1/2 wheat)
    1 c. canola oil
    1 c. raisins or nuts (optional)
    2 Tbsp. vanilla
    2 tsp. cinnamon
    1 tsp. baking powder
    1 tsp. baking soda
    1 tsp. salt
    8 oz. crushed pineapple (don't drain)
Preparation
    Cream eggs, sugar and oil.
    Add dry ingredients then pineapple, zucchini and vanilla.
    Mix until blended.
    Put in 2 greased loaf pans.
    Bake at 350\u00b0 for 1 hour.
