Sweet Potato Pudding - cooking recipe

Ingredients
    2 lb. sweet potatoes, peeled and grated
    1 c. packed brown sugar
    1 Tbsp. butter or margarine
    1 tsp. ground cinnamon
    1 tsp. ground ginger
    1/4 tsp. grated nutmeg
    3 c. coconut milk
    2 tsp. vanilla extract
    1 c. raisins
    1/2 c. water
Preparation
    Heat oven to 350\u00b0.
    In large bowl, combine all ingredients. Stir until thoroughly mixed.
    If too thick, additional water can be added for desired consistency.
    Spoon into a greased 2-quart baking dish.
    Bake about 1 1/2 hours until set.
    Let cool before serving.
    Makes 8 servings.
