Seafood Gumbo - cooking recipe

Ingredients
    1 c. oil
    1 c. flour
    1 pt. crab claw meat
    1 pt. crab fingers
    2 lb. shrimp
    onions
    bell peppers
    shallots
    celery
    Tony's seasoning to taste
Preparation
    Heat oil in large pot.
    When hot, pour flour in slowly and stir until flour turns brown.
    Dice seasonings and saute in roux mixture.
    Add 4 to 5 cups hot water and Tony's seasoning.
    Add crab meat.
    Cook for 30 minutes.
    Add shrimp and cook another 30 to 45 minutes.
    Let sit for a couple of hours.
