Cheesy Potato Casserole - cooking recipe

Ingredients
    7 medium potatoes with peel
    1/4 c. butter, melted
    1 small chopped onion
    1 tsp. salt
    1/4 tsp. pepper
    1 (8 oz.) sour cream
    1 can cream of chicken soup
    2 c. (8 oz.) shredded Cheddar cheese
    1 1/2 c. herb seasoned stuffing mix
    3 Tbsp. melted butter
Preparation
    Boil potatoes until tender.
    Drain and cool.
    Cut into 1/4 inch strips.
    Set aside.
    Combine 1/4 cup butter and next 5 ingredients in large bowl.
    Gently stir in potatoes and cheese.
    Spoon into a lightly greased casserole dish (13 x 9 x 2-inch).
    Combine 3 tablespoons melted butter and stuffing mix.
    Sprinkle on top of potato mixture.
    Bake 25 to 30 minutes or until bubbly in the middle at 350\u00b0.
