Sweet Corn Salsa - cooking recipe
Ingredients

2 c. fresh corn kernels
3 Tbsp. sweet butter (cold), cut in pieces
1/4 c. tomatoes, seeded and diced
1 small jalapeno, seeded and minced
2 Tbsp. red onion, minced
2 Tbsp. cilantro, chopped
1/4 c. rice wine vinegar
1/8 tsp. black pepper
1/4 tsp. salt
Preparation

Cut raw corn off cobs. Combine all ingredients in saucepan over high heat and stir while bringing salsa to a boil.
When butter has melted completely and takes on look of light butter sauce, remove from heat and serve immediately.
Makes 3 cups.
