Tomato-Basil Bruschetta - cooking recipe

Ingredients
    1/4 c. extra virgin olive oil
    2 large garlic cloves, minced
    1 lb. ripe tomatoes, peeled, seeded and chopped
    1/3 c. sweet white or red onion, chopped
    1/3 c. coarsely chopped fresh basil, plus leaves for garnish
    8 slices crusty Italian bread, cut 1/2-inch thick
    2 Tbsp. balsamic vinegar
    1/2 tsp. salt
    1/2 tsp. coarsely ground black pepper
    1 c. shredded Mozzarella cheese
Preparation
    In small bowl, combine olive oil and garlic; let stand 15 minutes.
    In medium bowl, combine tomatoes, onion, basil, vinegar, salt, pepper and 2 tablespoons garlic oil.
    Stir gently to mix. Let stand 15 to 30 minutes, allowing flavors to blend.
