Diabetic Or No Sugar Fruit Cake - cooking recipe
Ingredients

1/2 c. raisins
5 dates or prunes, finely chopped
5 figs, chopped
16 dried apricot halves, finely chopped
1 orange rind, grated
1/2 c. butter
1 1/4 c. plain flour
1/2 tsp. soda
1 tsp. baking powder
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. cloves
1 tsp. vanilla
2 eggs
Preparation

Combine raisins, dates, figs, apricots and orange rind in small bowl.
Set aside.
Cream butter until light and fluffy.
Add eggs and vanilla; stir in flour, soda, baking powder and spices. Pour in fruit mixture and beat until blended.
Bake in greased loaf pan at 325\u00b0 for 45 to 55 minutes.
Cool and store in airtight container for 3 days.
