Cajun Chicken Vegetable Soup - cooking recipe
Ingredients

3 to 4 Tbsp. butter
2 c. diced carrots
1 c. diced onion
1 c. diced green pepper
3 stalks diced celery
2 Tbsp. Cajun seasoning (Paul Prudhomme's Vegetable Cajun Magic)
2 Tbsp. garlic powder
1 tsp. black pepper
1 tsp. salt
2 c. chicken broth
2 c. tomato juice
1/2 c. uncooked converted rice
2 c. diced, cooked chicken
1/2 to 3/4 lb. cooked shrimp (optional)
Preparation

Melt butter in a large pot or soup kettle.
Add vegetables, spices and seasonings.
Saute 4 or 5 minutes.
Add chicken broth. Bring to a boil and cook 10 minutes.
Add tomato juice and V-8 juice.
Bring to a boil.
Add rice and cook until rice is tender, about 20 minutes.
Add chicken and shrimp.
Serve.
Makes 10 cups.
