Oven Fried Orange Roughy(Makes 4 Servings) - cooking recipe

Ingredients
    1 c. skim or low-fat milk
    1 tsp. salt
    4 orange roughy fillets, haddock, cod or scrod, washed and patted dry (1 1/4 lb.)
    2/3 c. dried bread crumbs
    1/4 c. grated Parmesan cheese
    1/4 tsp. ground thyme or crumbled dried thyme leaves
Preparation
    Preheat oven to 450\u00b0.
    Spray baking dish with vegetable oil spray.
    In shallow bowl or pie plate combine the milk and salt. Add the fillets and coat them well.
    In second shallow bowl or pie plate combine the bread crumbs, Parmesan cheese and thyme.
    Remove fillets one at a time from the milk and dip them into the crumb mixture, coating them thoroughly.
    Place the breaded fillets in a prepared baking dish.
    Place pan in middle of the oven and bake fillets 12 minutes or until they are just baked through.
    Remove from oven and serve.
