Potato Salad With Hard-Boiled Eggs - cooking recipe

Ingredients
    7 large baking potatoes, washed and cut in half for boiling
    3 hard-boiled eggs, chopped (if you are watching the cholesterol, use just the egg whites)
    1/2 small onion, chopped fine and rinsed in cold water
    1 1/2 tsp. salt
    1 tsp. fresh ground pepper
    1 tsp. celery seed
    2 Tbsp. white wine vinegar
    1/2 c. mayonnaise
    small bunch fresh parsley
Preparation
    Boil potatoes in a large pot of salted water until done, approximately 15 to 20 minutes.
    Test for doneness with a fork. Drain into a colander and let cool.
    Peel skin and cut potatoes into cubes.
    Place potatoes in a large mixing bowl and add chopped eggs and onion and remaining ingredients.
    Mix with a large spoon and refrigerate at least 2 hours.
    Serves 8 to 10.
