Chicken With Artichokes And Peas - cooking recipe
Ingredients

2 Tbsp. flour
1/8 tsp. pepper
1/2 tsp. salt
3 whole, medium size chicken breasts, skinned, boned and cut into thin strips
2 Tbsp. olive oil
1 c. chicken broth
1/4 c. dry white wine
1 (9 oz.) pkg. frozen artichoke hearts
1/4 lb. thinly sliced Prosciutto or ham, cut crosswise in half, then into strips
1 (10 oz.) pkg. frozen peas
1/4 c. chopped parsley
Preparation

Combine flour, salt and pepper.
Coat chicken strips with flour mixture.
In a 12-inch skillet over medium-high heat in hot olive oil, cook chicken until lightly browned, stirring frequently.
Add broth, wine, artichokes and Prosciutto; heat to boiling.
Reduce heat to low, cover and simmer 5 minutes, stirring occasionally.
Stir in peas; cook 5 minutes more or until chicken is fork-tender.
Serves 6.
